Toblerone Shortbread Recipe

20161221_112306We’ve been munching on this fantastic shortbread all week after one of our staff made some for us as a treat. We wanted to share a nice recipe with you to try!

Toblerone Shortbread

Ingredients

  • 2 cups unsalted butter softened
  • 1 cup instant dissolving (fruit/berry) sugar
  • 3 1/4 cups flour
  • 1/2 cup rice flour
  • 2 cups coarsely chopped Toblerone chocolate

Preheat oven to 325 degrees.

Beat sugar and butter till fluffy.

Mix together flours and then add to butter mixture with wooden spoon. Mix just until combined. Reserve 60 larger pieces of the toblerone, add remainder to the dough and combine.
Drop 1 rounded tsp onto ungreased baking sheet, flatten slightly, press one chunk of Toblerone onto each cookie.
Bake at 325 degrees for 20-25 mins, let cool slightly before lifting off pan.
Makes about 60 cookies.
